Food and Nutrition Education in Schools: A Historical Case Study of Shokuiku in Japan (Poster 25)

Abstract

Food-related issues are an going global concern, and the call for food and nutrition education in schools has intensified. This study aims to explore the way to organize shokuiku – food and nutrition education – in Japan from a historical perspective. To achieve this objective, we formulated the following research questions: (1) what is shokuiku, and (2) how has shokuiku been taught in schools focusing on home economics? From both the historical perspective of shokuiku and the educational trends in Japan, we propose that shokuiku should be introduced as a part of STEAM (science, technology, engineering, arts, and mathematics) education within the common curriculum, and home economics and nutrition teachers should engage with other subjects’ teachers to create multidisciplinary or interdisciplinary approaches.
